Sodium citrate is inodorous and taste salt, cool. It will loss crystal water at 150° C and decompose at more high temperature. It dissolves in ethanol. Sodium citrate is used to enhance flavor and maintain stability of active ingredients in food and beverage in detergent industry, it can replace sodium tripolyphosphate as a kind of safe detergent it can also be used in fermentation, injection, photography and metal plating.
Sodium citrate is used as flavor agent and stabilizer in food and beverage industry. Used as an anticoagulant, expectorant and diuretic in the medical industry; In the detergent industry, sodium tripolyphosphate can be substituted as the auxiliary agent of non-toxic detergent. It is an excellent chelating agent/complexing agent in chemistry, and the industrial application of sodium citrate takes advantage of this property. It is also used for brewing, injection, photographic medicine and electroplating.
Sodium citrate is the most important citrate at present. It is mainly produced by the fermentation of starch substances to produce citrate and then neutralized with alkali substances. It has the following excellent properties :(1) safe and non-toxic properties. Because the raw material of sodium citrate is basically from grain, it is absolutely safe and reliable, and will not cause harm to human health. The Food and Agriculture Organization of the United Nations and the World Health Organization do not limit the daily intake of this product and it may be considered drug-free. (2) It is biodegradable. After being diluted by a large amount of water in nature, part of sodium citrate becomes citric acid, and both coexist in the same system. Citric acid is easily biodegraded by oxygen, heat, light, bacteria and microorganisms in water. It is generally converted into carbon dioxide and water by aconitric acid, itaconic acid and likanganhydride. (3) It has the ability of metal ion complexation. Sodium citrate has good complexing ability to metal ions such as Ca2+ and Mg2+, and also has good complexing ability to other metal ions such as Fe2+ plasma. (4) Excellent solubility, and the solubility increases with the increase of water temperature. (5) It has good pH adjustment and buffering performance. Sodium citrate is a kind of weak acid and strong base salt, which can be combined with citric acid to form a strong pH buffer, so it is of great use in some occasions when the pH is not suitable for a wide range of changes. In addition, sodium citrate has excellent retarder and stability.
