Mangosteen extract is a light yellow powder to a brown extract. It is very sweet, its sweetness is 240 times sweeter than sugar, the sweetness is close to sugar, and it has a slightly similar aftertaste to licorice. The high-purity mogroside has a melting point of 197 to 201 °C. Soluble in water and ethanol.
