There are three isomers, namely trehalose (alpha, alpha), isotrehalose (beta, beta) and neotrehalose (alpha, beta), which have non-specific protective effects on a variety of bioactive substances. Trehalose is ubiquitous in many edible animals, plants and microorganisms in nature, such as mushrooms, algae, beans, shrimps, bread, beer and yeast fermented food, which are widely used in people's daily life.
