Calcium propionate is white light flake crystals, or white granules or powder. Slightly special smell, easy to be deliquescent in humid air. Monohydrate salt is colorless monoclinal plate crystal. Soluble in water, slightly soluble in ethanol. It has a wide range of antibacterial effects on mold, yeast and bacteria, etc. It can be used as a preservative in bread and cakes. 2. Calcium propionate has inhibitory effect on mold and good air bacillus which can cause bread to produce mucilaginous material, but has no inhibitory effect on yeast.
