Introduction:
Fructose is a monosaccharide. It is an isomer of glucose and is abundant in free form in fruit juices and honey. Fructose also combines with glucose to form sucrose. Pure fructose is a colorless crystal, melting point of 103~105℃, it is not easy to crystallization, usually viscous liquid, easily soluble in water, ethanol and ether. D-fructose is the sweetest simple sugar.
